I love bananas, more than bananas, I love a good muffin; I however cannot eat a mushy banana, and that’s what I had lying in the fruit bowl. I didn’t want to throw them away, so I decided to bring my love for muffins and my love for bananas together, and it was so awesome that I just had to share in with you!
Here’s what I used:
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon cinnamon (optional)
½ teaspoon salt
½ cup butter, room temperature
1 cup sugar
2 eggs
3 bananas, mushed
Now for the fun part!
Preheat your oven to 180°C or 355°F.
Butter your cupcake trays or line them with cupcake liners.
Sift the flour, baking powder, bicarbonate of soda, salt and into a large bowl. Set aside
Cream butter and sugar together until well mixed
Add the eggs, one at a time, beating in into the butter and sugar recipe.
Add your mushed banana to the egg mixture and whisk well.
Create a well in your dry ingredients and pour your wet ingredients into the mixture.
Mix well.
Scoop your batter into your cupcake tray and pop it in the oven for 15-20 minutes, or until a skewer inserted comes out clean.
