If there is something I love almost as much as chicken, it would be potatoes.
Theyβre very diverse in that you can have then fried, baked, boiled, mashed and so many other ways.
I wasnβt really a huge fan of mash until I used a certain little something that helped my mash taste like a cloud. Light and oh so fluffy.

So today Iβm going to teach you how I got that texture.
You will need
7 medium potatoes
Water for boiling
125 grams butter
2 eggs
Stand or hand mixer
Directions
Boil potatoes in salted water until nice and soft
Drain the potatoes of all the water but save about 1/4 of a cup of water
Now hereβs the fun part, pop the potatoes in a stand mixer with the paddle attachment or your hand mixer and start to beat your potatoes until you have no lumps.
Add in your 1/4 cup of water and beat until well incorporated.
Taste for salt and/or pepper
Add your butter and beat well.
Add your eggs one at a time beating until well incorporated after each egg.
Again taste for salt and/or pepper.
If your flavour is balanced. Enjoy you fluffy potatoes.
I had mine with a yummy chicken and coleslaw.
