VEGETABLE FRIED NOODLES RECIPE

I love pasta, it’s literally one of my favourite things to eat in the world. So when I’m stuck with something to pair a delicious protein recipe with, my ultimate go to is this fried noodle recipe. I haven’t met one person who doesn’t like this recipe, SERIOUSLY! It’s amazing because you can add any vegetables that you have available and it will taste amazing. Let’s make it, shall we?

Ingredients

 Spaghetti 

1/2 large onion, chopped (not diced)

1 medium red onion, chopped (not diced)

1 large green bell pepper, chopped 

3 small peeled carrots, julienned

2 tbsp vegetable oil

1/4 cup soy sauce

Directions

Boil spaghetti to normal cooking time, be careful not to over cook

When spaghetti is ready, throw into ice water bath until cool (this stops it from continuing to cook) drain and set aside

In a large skillet over medium heat, add 1 tbsp of vegetable oil until it heats up. Stir fry vegetables until soften but still have a bit, set aside

In the same skillet (because I didn’t want to let any flavour, add 1 tbsp vegetable oil until hot, toss drained noodles into the pan and fry for about 3 minutes

Add cooked vegetables and soy sauce to the spaghetti, mix quickly and let it cook for 1-2 minutes.
