Have you ever heard the saying, ‘the best inventions come to us when we’re hungry’? I could be paraphrasing or maybe I just made it up, I don’t know. lol
So I woke up, and my siblings had just gone to school, and I was starving badly that morning, I mean, real starving, I felt like I hadn’t eaten in a decade.
So there were potato skins on the kitchen counter. My siblings have the tendency of not throwing things out when they’re done using them. I thought… maybe I could munch on those, I mean, I love potato wedges with the skins on so why not. That is how I came up with this super quick, easy and yummy recipe!
This is a care free recipe with no real quantity requirements, just make do with what you’ve got!
Ingredients:
Potato skins
Water
Vinegar
Vegetable oil for deep frying
Directions:
Thoroughly wash your potatoes prior to peeling, if not, thoroughly wash the potato skins
Soak potato skins in vinegar water to the ratio 2 liters of water to 1 tbsp vinegar for about 5-10 minutes. This helps the crisp up nicely.
Drain the skins of the water and deep fry until crispy but not too brown (they burn easily)
I enjoy mine with mustard and spice for chips.
Cool thing that I learnt a few years ago, if you do not have spice for chips, BBQ spice is a great substitute.
