So my boyfriend and I had a little getaway situation over the weekend. Naturally, I love to prepare the food we’ll eat and so this time I decided to make pizzas!
Let me tell you, this recipe had me stuffed like a thanksgiving turkey with just a few bites. My boyfriend on the other hand ate like all of it!
Please try it, you will love love love it.
PIZZA DOUGH
For the dough I used:
10 g of yeast (one packet)
1 chi lukewarm water
3 cups all purpose flour
1/4 tsp salt
1 tbsp sugar
1/4 cup vegetable oil
Here how I made it:
Add yeast to lukewarm water and let it sit for 10 minutes
In a large bowl, sift flour and salt, add sugar and oil and mix until it’s crumbly.
Add the water with yeast and knead until well incorporated (it shouldn’t take long)
Butter a small bowl lightly and place dough mixture in there. Cover it with plastic wrap and let it rest for 30 minutes to an hour.
***my dough rested and rose overnight because I made it a night before the getaway in order for the preparation time to be reduced.***
TOPPINGS:
You can use any topping of your choice. I used chicken and a variety of veggies.
For the chicken:
Cut two chicken breasts into cubes.
Marinate with:
1 tbsp chicken spice
1/4 tsp black pepper
1/4 tsp salt
1/2 tsp garlic powder
1 tsp brown onion
1/2 tsp sugar
1 tbsp Portuguese chicken
1 tbsp chicken masala
1 tbsp paprika
1 tbsp vinegar
Cover the marinated chicken with cling wrap and place it in the freezer for 2 hours.
For the veggies:
1 larger onion, diced
2 large green bell peppers, diced
1 larger tomato, diced
Assembling the pizza:
You’ll need:
The well rested and risen pizza dough
Your prepared toppings
LOTS OF CHEESE. I used the equivalent of six slices of cheddar cheese and even more mozzarella cheese.
Preheat oven to 220 degrees C
Lightly flour your counter top and roll the dough out.
Butter and flour your oven pan and place the rolled dough in there.
Mix together two packets of tomato paste and an equal amount of tomato sauce and spread it evenly onto the dough.
Grate a fair amount of cheddar cheese (I used the equivalent of six slices) over the tomato paste.
Add the toppings in any order of your preference.
Grate a fair amount of mozzarella cheese onto the top.
Bake in a preheated oven for 20 minutes, or until the pizza base has browned and the toppings are ready.
Cut into desired shapes and ENJOY!!
