I know we’ve all been stocking up or at least trying to during this crazy period of uncertainty. In the event that you got some bananas and maybe they’re going bad, banana bread is a great way to use them and it is absolutely delicious!
You will need:

2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
1/2 cup sugar
2 eggs
4 medium ripe bananas, mashed
Directions:
Preheat oven to 180 degrees Celsius
Butter and lightly flour your loaf pan or line with baking paper.
I do not have a loaf pan suitable for a gas oven so I used an 8 inch square baking pan instead.
Sift flour, baking powder, baking soda and salt. Set aside
In a large bowl, beat butter and sugar until fluffy.
Add eggs, one at a time.
Add mashed bananas and combine well.
Add dry ingredients to the wet ingredients and mix until well combined. Careful not to over mix as bread will not rise.
Deposit mixture into your baking pan and bake for 25-30 minutes, or until a skewer inserted comes out clean.
