SUPER EASY TACO RECIPE

TACOS!!!!! 

I had a remarkable lunch this Saturday. The my boyfriend and I tried something we’ve only seen done on TV and boy were we impressed! So much so I had to share it here!

TACO SHELL

So I first started off with a tortilla recipe here:

INGREDIENTS 

4 cups all-purpose flour

1 teaspoon salt

2 tsp baking powder

2 tbsp lard (I didn’t have lard so I used margarine)

1 1/2 cups water

DIRECTION

Whisk the flour, salt, and baking powder together in a mixing bowl. Mix in the lard with your fingers until the flour resembles cornmeal. Add the water and mix until the dough comes together; place on a lightly floured surface and knead a few minutes until smooth and elastic. Divide the dough into 24 equal pieces and roll each piece into a ball. 

Preheat a large skillet over medium-high heat. Use a well-floured rolling pin to roll a dough ball into a thin, round tortilla. Place into the hot skillet, and cook until bubbly and golden; flip and continue cooking until golden on the other side. Place the cooked tortilla in a tortilla warmer; (I placed them in the oven as I describe below) continue rolling and cooking the remaining dough.

TACOS

So I didn’t want to fry the tacos because I hate the oily taste the shell had when I tried one. So I instead oven baked them!

So when I’d take a tortilla off the pan, I’d gently fold it and place in on the oven wire with two wires between the tortilla so that I would have the nice tortilla shape and the ooooh so crunchy shell.

They baked at 50 degrees Celsius for about 30 minutes (until they were crunchy).

Tip: add them to the oven straight from the pan so that they don’t dry out and can easily be folded. Be careful not to burn them.

THE TACO FILLING

INGREDIENTS 

500g ground beef

1medium onion, chopped

1 tsp chili powder

1/2 tsp salt

1/2 tsp garlic powder

1 cup tomato sauce

1 1/2 cups shredded cheddar cheese

2 cups shredded lettuce

2 medium tomatoes, chopped

1 onion, chopped

DIRECTIONS

In large skillet, brown ground beef and onion over medium heat for 8 to 10 minutes or until beef is thoroughly cooked, stirring frequently. Drain.

Stir in chili powder, salt, garlic powder and tomato sauce. Reduce heat to low; cover and simmer 10 minutes. 

To assemble tacos, layer beef mixture, cheese, lettuce, onions and tomatoes in each taco shell.
