Today load shedding caught he at lunch and I had to cook over a fire outside. When I walked into the house to grab some of the ingredients, the sweet potatoes sitting in the kitchen caught my eye. I remembered how every time my grandmother would toss them under the brazier while she cooked and they’d slow roast and just be a perfect dessert for after supper.
I did the same today. I tossed one under the brazier and when I was done cooking and eating. I pulled it out and as I’m typing this blog, I’m enjoying the sweetness and added flavour the charcoal brings to this simple dish!
If you’re going to try this yummy cook, make sure you don’t forget to rotate your sweet potatoes so they cook evenly all through.
