So I have friends who swear by boxes cake mix, I’ve personally never been a fan of the texture and flavour in any way, shape or form.
I challenged myself to try to make it better with a few changes and I have to admit, it helped lift the cake up. So let me show you what I did.
First things first, I purchased a 500 gram packet here:

What the cake actually called for:
2 eggs
3/4 cup of water
1/4 cup of oil
What I added instead:
1/4 teaspoon salt (to the dry cake mix)
In a separate bowl:
3 eggs

1 teaspoon vanilla

3/4 cup milk

1/2 cup oil

I mixed the wet ingredients and added them to the dry ingredients:

Combined well:

I made a small cake instead of 12 cupcakes and after nearly 50 minutes at 180 degrees celsius in the oven (I’d suggest using a 9 inch pan instead of the 8 inch pan I used) and this was the final result:

I still didn’t quite enjoy it more than my own home made cake mix but it definitely made it better and less spongy.
