HONEY AND GINGER(BREAD) CAKE RECIPE

Baking for kids can get difficult because they get tired of flavours fairly quickly. So because I bake for my siblings nearly everyday, the challenge remains to be creative and innovative and keep them excited with different flavour combinations that I create.

Yesterday I was stamped, until I realised my siblings love honey and ginger so I decided to put the two together and make a delicious and flavourful cake.

I should say however that the honey flavour is pretty strong while the ginger flavour playfully lingers in the back of your mouth so if you do not like the two flavours, this might now be the cake for you!

Ingredients

1/2 cup white granulated sugar

1/2 butter

1 egg

1 cup honey 

2 1/2 cups all purpose flour

3 tsp ginger powder

1 1/2 tsp baking soda

1/2 tsp salt

1 cup boiling hot water

Directions

Preheat your oven to 175 degrees celsius

Butter and flour a 10 inch square cake pan

In a large bowl using a wooden spoon, cream butter and sugar until well combined

Add your egg and mix well

Carefully mix in your honey until well incorporated

In a separate bowl, sift together flour, ginger powder, baking soda and salt.

Carefully incorporate dry ingredients into wet ingredients. Be very careful not to over mix.

Finally add your boiling hot water and mix well.

Pour batter into your baking pan and bake for 30 minutes or until a skewer inserted comes out clean.

Honey and Ginger(bread) Cake

I was pleasantly surprised with the texture and flavour of the cake. It’s just what it promised. An added bonus was it wasn’t sickly sweet, the balance of flavours was just right!
